When washed they are less bitter and delicious. Pour the leaves into 3–4 litres of hot water, leave it to soak for 1 hour then add the 25g Potasse/ Kamwa/ Sel gemme sachet, and slow cook for 45 minutes until it’s soft. Then sieve and rinse it again with clean water and finally cook in the dish you prefer. Bitter leaves are vegetable plants whose leaves are eaten green and also dried. Ndole or bitter leaves are sometimes compared to spinach for their colour and texture resemblance.
